Squash, Ricotta and Brown Butter Sage on Crostini

Ok, so this is not quite seasonal anymore (because it's been an entire season since the last time I posted!) but it's still worthy of sharing!
I had some girlfriends over for a cocktail party (I just love any excuse to entertain) and the menu was so simple, yet impressive and delicious!  



What else was served?
Cheese plate with Manchego, local honey, sliced apple and marcona almonds
Grilled shrimp with homemade cocktail sauce.
Smoked salmon with lemon, caper creme fraiche
 Sarah came over early to help assemble, and sample :) 
Can be assembled an hour before quests arrive and heated before serving

Before a Party:
Lay out your pretty platters and know where each dish will be going.  This gives you a feel for how it will look, the flow of your appetizers, drinks, dessert, and keeps you from having any last minute surprises and hick-ups while guests are there.

Ingredients:
1 lb cubed Butternut Squash
2 T Butter (or more)
Fresh Sage, thinly sliced
Ricotta
1 baguette, sliced and toasted with olive oil and salt

Directions:
At 400, Roast Squash with a little oilve oil and salt and pepper for about 30 minutes, tossing once 20 minutes in.
Meanwhile, brown the butter and fry and sage leaves
Assemble:
crostini, ricotta, squash, butter/sage, sprinkle with a couple flakes of very good salt...
